Shitty end-of-winter Vancity weather calls for ramen. Dragonhead and Kish were down, so we headed to Yah Yah Ya Ramen in Richmond for our first time there.
Kish chose the black tonkotsu ramen. This broth is known for being extra rich and is lighter than the others. It’s still pork bone-based broth, but some places apparently mix a bit of chicken or veggie stock with it too. This one came with pickled ginger and it’s called “black” because a blackish oil made from charred sesame seeds and garlic is added before serving.
Mell ordered her fav miso ramen which thankfully came with half an ajitama—these days it seems every ramen joint charges extra for the flavoured egg, so she appreciates this one. Miso ramen is pork bone broth mixed with lots of miso (fermented soybeans) to create a very thick, robust, almost nutty flavour. She loves comparing the miso ramen at different places and this one made the cut! The broth was wonderfully flavoured and the noodles were the right consistency, still fairly firm.
G: Oh yeah, how firm?
Grace got the mazesoba—no broth, but just as delicious as any broth-filled bowl of ramen. The toasted seaweed, pork, and egg yolk lent the firm and chewy noodles a wonderful richness. 10/10 would try again.
Grace and Kish also shared some onigiri. These are sold in convenience stores everywhere in Japan and are also a popular lunch item for kids. There are even molds used to help get the correct traditional triangle shape (or double as a lunch box?) but the pros shape them by hand. Starting with Japanese white rice and usually filled with salmon or pickled plum held together with seaweed, these ones were topped with sesame and bonito flakes too.
Dragonhead went for the shoyu ramen, or soy sauce ramen; the broth is usually clear and darker thanks to the soy. This is the most traditional of all the different ramen broths. The soup is tangy, salty, and savory—yet still keeps a mild flavour.
